Hi guys i'm back again and have made what I think is the best one so far! This cake was made for a 1 year old and it awsome. I made a beautiful mermaid cake with corals, mermaids and sea creatures. This was very nerve racking for me as I had to assemble the cake at the parents house and I have never actually put a cake together infront of the people that its for!

I used another type of food colouring it was a gel based colour and it mixed really well and it was easy but I prefer to use the powder as the colour comes out a lot better and it can be more specific to my needs. The colour for the base of the cake is awsome its not a blue or a green its just perfect fot undersea living!

The corals were very simple to make all it is, is dry peanuts(not roasted ot salted) white chololate (melted) and food colouring. I melted the chocolate added the colour and mixed in the peanuts. I then put the mixture on baking paper (all different sizes) and put in the frezzer. Really simple and it looks really efective.

I used my famous butter icing for this cake and it was a little hard this time ans the day for this cake was saturday and it was mighty hot and the icing was on the verge of melting! It was fridge then cake fridge then cake etc it was not as easy cake to ice at all.

The tops of the cake were made with a sponge roll and ice cream cones which were stuck in with skewers (these are really easy to work with and they just make the tops of the castle) The purple bits were made out of soft white icing coloured pruple( this was fun using a liquid colour for it lets just say I was covered in purple fool colouring), the shpaes were cut out and placed on. Then all that was left was to decorate with the sea shells ( which were of course shaped chocolates) and the path guides were lollipops!

The mermaids were placed in behind the cake and the candle was placed in the middle. All in all it turned out to be fantastic and the birthday girl just loved it!!

Yes that is my boy there having a good look at the cake! His favorite part was eating the cake!! Typicall boy!!!
